We used crayfish, which is abundant in South Africa.

My name is Jose and I live in Valencia (Spain), where the real Paella is. How many of you have ever tried a real Paella in Valencia?. It seems to be clear that just a few ones if not none, I just can not believe what I have read about the Paella.
First of all Paella Valenciana is made, among other ingredients, with rice, rabbit, chiken, vegetables, snails and rosmery and no see-food at all.
You should be a little bit more serious about the real recipe, otherwise call the Web "Tanduri rice or Chinesse cuisine and others". The thing is that you can add as many things as you want to the rice. No problem, it'll be fine, but it won't be Paella Valenciana de Pollo y Conejo, as is real name is.
Other varieties are Paella de Marisco (see-food one, typical from Alicante), Arroz Negro (Typical from Castellon), Arroz a Banda (see-food as well but served aside). Arroz en Costra (with egg on top of de Paella), Arroz de Verduras (Paella for vegetarians), Fideua, etc.,.
The thing is that especially in sumertime, many tourist (we call them Guiris) come to Spain and are literally tricked by some propietors of Bars and Restaurants since they call anything with rice Paella Valenciana (I have even seen Paellas with sausages and overgines).

I'm from Denmark and a huge fan of paella. But I've recently heard something about that the original name for the seafood (paella) dish isn't "paella". According to what I heard "seafood paella" is just something it came to be named later on because of it's popularity... I don't know?! Could this really be true? I know that the original paella from Valencia comes with meat such as rabbit, chicken and snails, but is it true that what we know as seafood paella really has a nother original name?

The way Paella is done when it is at its best (like at Balear Arroz y Cava in Madrid) is of course to fry the rice in lots of olive oil until its golden, and then continuing with all the rest. Funnily enough, I havn´t seen this in any recepie so far. But it does wonders.

Aunque yo encontré sabrosísima la paella valenciana, y pese a que según me han enterado, los alrededores de dicha ciudad constituyen la auténtica "cuna" de este plato suculento, no es mi variedad predilecta; durante más de un mes, cuando tuve la inmensa dicha de hallarme en esta antigua ciudad conquistada añtano por don Jaime, me atraqué muuuy a menudo de manjares de una y otra especie, entre los cuales figuraban paellas hechas siquiera medianamente fiel al estilo "tradicional" (de veras no podemos decir fieles del todo , pues en esta región en donde abundaban...y abundan aún los arrozales, se solían incorporar, aparte de este grano feculento, caracoles, anguilas y otros animales que allí se encontraban). Con todo, no me satisfice con la "actual" forma valenciana de la paella que, además del arroz azafranado consuetudinario, en cuanto a condimentos al parecer jamás se apartaba de pollo, y una forma de habas gigantescas(me gustaría que alguien me dijera con exactitud cómo las tales se llaman).
Es precisamente cuando me encontraba en otra ciudad española, Zaragoza, ( y también en Madrid en un restaurante que se nombraba "el Club") que paladeé una paella (la llamada "mixta") que más allá de los ingredientes mencionados, estaba repleta de anillos de calamar, unas langostillas (se mal no me acuerdo, llamadas carabineras) , sepia, y un arca de Noé verdadera de otros mariscos. Mis amigos zaragozanos la prepararon, y os puedo decir que no hubo reparo en costo, ya que gastaron un dineral en comprar el abigarrado surtido de componentes. Os advierto que sólo doy mi propia opinión al respecto. Comed lo que queráis, siempre, que hay una tremenda variedad de paella de que podéis escoger, inclusive una elaborada a base de fideos, al estilo "macarroni" y es muy probable que tengáis vuestras propias ideas también. Vale la pena probarlo todo, pero todito mientras estéis en España. Y mientras en Valencia no que se os olvide probar, junto a la paella, la horchata exquisita - es una bebida lechosa, algo parecida a un batido de leche de soja, y fue lo que de veras me encantó. BUEN PROVECHO.

I really enjoyed your site. Can't quite decide though what I liked more: the pics (which reminded me of a couple of Paella cooking contests I took part in while in Valencia for the Fallas) or the stupid comments of some of the people on the "Reactions" page.
To all of those, who say that "this is not Paella!" : well, no two Paellas Spaniards have cooked for me were ever the same, so I find it a bit silly to say that this recipe is "wrong". And besides - if you know how Paella is made - why don't you build your own website and publish it, rather than just criticizing this great effort?!

I cooked this last night for the first time and it was excellent! Alas I couldn't get hold of a rabbit (not until next month I was told) but as I was only cooking for 4 I decided to go ahead anyway.
Other forced adjustments were cod in place of hake and double the recommended amount of mussels (that was the size of the bag from my fishmonger).
The great thing was sitting around outside with our friends, wine bottles open and being consumed, while I cooked the food - far better than being stuck in a kitchen. We have a large round barbecue and I used charcoal in this to cook over rather than wood.
With everything chopped and ready to go in advance it couldn't have been simpler, and the results were truly superb. We've got quite a bit left over so I'll be enjoying it again several times! Congratulations and many thanks for helping us have a truly memorable evening. Photos to come!!!

Quisiera felicitaros por vuestra p·gina web. Es una muy buena aproximaciÛn a una paella decentita y se nota el origen catal·n por lo de la cebolla. En mi opiniÛn le sobra el laurel, el tomillo, la cebolla y el perejil, y si le cambiamos la merluza por un buen rape ya quedarÌa perfecto. En cualquier caso, lo m·s destacable es lo sencillo, pero completo, que habeis descrito el proceso de elaboraciÛn.
Que no os desanimen los que dicen que no teneis ni idea de hacer una paella, ni siquiera entre dos pueblos cercanos en Valencia nos pondremos nunca de acuerdo, y por suerte la paella es flexible y con un poco de imaginaciÛn y buen toque puede quedar excelente.

I have to say, that is the best paella site I've seen. Many congratulations.
Here in Helsinki I will have to travel downtown to get good sausage, but we do have a good variety of fish, and I'm quite flexible when it comes to which one.
I like to include green olives and I have a good source for Moroccan olive oil, which somehow is more authentic tasting than the over refined Spanish one I get here. Or maybe I'm just cheap.
My biggest regret is that I don't have a paella pan and I can't really light a fire on the balcony, so I make do with a regular frying pan and then transfer it all to a flat-bottomed wok for the simmering phase.

I recently purchased a Paella pan from Calphalon and will be trying to make paella for myself.
Anyways I find your site very useful although I don't know if I can find rabbit in my area.

Great page, very funny, but whoever taught you to add onions to paella shoud be skinned, stuffed and mounted. All the other add-ons, such as merluza or the aromatic herbs are tolerable, but ONIONS!!!. I'd like to answer a coupla questions, too. No way you should add wine into the pan, the wine must go into the cook and his/her helpers. Absolutely forbidden to add oranges or olives or alioli sauce. The fact that all these things come from Spain doesn¥t mean you have to put them together.

I appreciate the efforts to bring paella valenciana forward to people's attention but I completely disagree with most of the ingredients you use on the preparation of the dish. I come from Valencia and we certainly do not used onion, black pepper, parsley, thyme, bayleafs or garlic. There may be variations to the traditional valencian dish (you can use chicken, fish, rabbit, seafood) but when it comes to herbs and spices, all the above mentioned eliminate the true flavour of the paella valenciana. Paella is not just a Spanish dish but more specifically a Valencian dish and therefore I cannot accept the additions to the original recipe you are proposing in your list of ingredients.

is I'd probably have no takers anyway. So when
I make it I usually cut back on the ingredients

my wife and I get done. Incidentally, have you
tried substituting octopus (polpo) for the squid.
That's what we had tonight. Yummy! Only one
issue to be aware of with octopus is that it has to be
boiled first if you want to be able to chew it.
Anyway, I had mine tonight with a generous helping
of crushed red pepper. If I don't sweat it ain't
good!

I will try your recipe, although the rabbit may not be in it, pretty hard to find in my area. I cook as a way of life and was wondering if the saffron is the main flavor, we have reduced it in our oil and then added it to the rice, when cooking, to give a nice uniform color and flavor and also added in dry form to the rice and water when cooking, although not uniform in flavor or color it gives a more home cooked flavor. I love paellas, I ate them a lot in Venezuela in Spanish restaurants. The chef was usually from Spain. Anyway, I am going to cook this recipe for This coming New year eve.
I also want to make a common. Someone wrote in his letter, where his/ her recipe was also sent , that the word "Paellera" It is not the proper name for the pan where paella should be cooked. I just checked my Laurousse dictionary and the word "paellera" is written on it. The meaning of this word according to this dictionary is "gran sarten que sirve para guisar la paella."
Espanol es mi primer idioma reconozco que se me estan olvidando muchas palabras en espanol debido a que llevo muchos anos aqui y muy poco lo uso. Por esta razon me gusta chequear mucho en el diccionarion cuando no estoy muy segura de la real existencia de una palabra o de su significado propio.

Para los que quieran saber el origen de la paella les dire que es el plato que tradicionalmente han preparado los 'llauraors' (labradores) en la zona de la Albufera de Valencia. La poblacion principal posiblemente sea la de Sueca como ha dicho una chica mas abajo. Y los ingredientes originales son los que tenian asequibles la gente de la zona: arroz, pato, 'garrofo' (habas grandes blancas y harinosas), tomate triturado, judias verdes planas y conejo o rata de arroz.
Ni marisco, ni pescado, ni chorizo,...
Aunque esta muy buena con otros vegetales. Lo del mezclar el marisco con la carne es un mal invento.
Lo mejor que podeis hacer es venir a esta parte del mundo a probarla, ya que si le preguntais a un valenciano cualquiera os dira que el ingrediente mas importante es el agua de aqui.
Lo mejor de la paella hoy en dia es que el arroz esta bueno con casi todo, osea que se puede hacer 'paella' de mil formas.

Closer to the ortodoxe than other recipies I've seen on the net, is still overweighted of ingredients. In doing a paella mixta as the one exposed, is my opinion that prawns, "cigalas" and mussels are more than enough from the fish section. In fact, hake or any other fish does not add any new flavour over the strong taste of the ones cited. Also, i think the use of stoking is not needed at all: is better to do it "in situ" while cooking the ingredients in the paella (coction time before the adding of the rice would be, at least, 30 minutes). In the same way, bay leaves or other herbs are not needed, since the rest of the ingredients provide it with a tasty flavour themselves. The addition of garlic falls in the same category, form my point of view. And the addition of onion is plainly a criminal act.

I tried it this weekend for about 30 persons (all ingredients x 3,5). The result was great! I modified the ingredients slightly: more tomatoes, less beans, more rice. As it was the first time I made paella I can't compare this "mixed paella" with "fish only" or "meat only" paella's but that will be the next step ... but not for 30 persons anymore ;-)

Thanks for the great web page on this. Several of us have a debate going on about the origin of the name of the dish. I was taught that the dish was invented as a special meal when the queen was coming for a visit. It was called Para Ella, which was eventually shortened to Paella.
Others contend it was named after the pan. I dispute this, pointing out that we don't call an omelette an omelette because it is cooked in an omelette pan.

last night. It was delicious. Yumbo juicy! I couldn't get
any real, whole fish for the broth, so I just seasoned the
liquid from the rest of the seafood. I put in small scallops,
squid, shrimp,mussels and I splurged on one lobster tail

Your Paella looks pretty good exept for a few details. First of all, "real" paella originally was not made with sea food, it was made with chiken, sausage and sometimes rabit. Latter the sea food was added and therefore became famous. But I must tell you do not remove the heads of the shrimp, since they add most of the flavor.

Paella. My first Paella was 25 years ago, while vagabonding with my best
friend in southern France. Having weathered a rain storm a family took us in
and drove us across the Spanish border into a Basque region for a dinner of
Paella. It was fabulous.
Not being able to find an authentic recipe I decided to look for one on the
Internet. How ironic to have found yours. Ironic because 25 years ago, just
before I met my best friend in southern France I had spent 6 months in
Eindhoven at the School of Industrial Design under Wim Gilles. A real
highlight of my life.
I also gave up industrial design to take a job which made money. Your recipe
will be tested on the southern Pacific Coast of California this first day of
the last year of this century.

Have you ever made fideua? I had it this summer when I was in Barcelona and
I've already made it once... great! It's just like paella but it is

I loved the presentation of your paella recipie. I am from Valencia,
"home of the paella" and it sounded pretty good except for one thing.
NEVER put in onions! Aside from that it was great. My favorite part
was at the end when you said "take a picture of the paella". I thought
that was just my tardition! I have a whole album filled with paella
pictures and friends. It's great!

My name is Alberto and I'm a spaniard living in Aarhus (Denmark). This
is due to several and long reasons, and we don't have the time now for
long explanations. Well, back to the point.
I have some guests for dinner this evening and my idea was to prepare
a paella, but it's not my strongest point at cooking, so I tried to
look for something on the net. And, sourprise, I met you and your
paella. I've had a lot of fun reading it, so my congratulations to all
of you. I'm sure you really have a great time during this tipical
paella meetings (by the way, any excuse is valid for those meetings:
tortilla de patatas, pinchos morunos, chuletillas de cordero, ....)
Well, I hope I won't be too hopeless and I can manage to prepare
something decent (I should be ashamed of myself, being spanish and not
knowing how to cook a real paella).

Note: I see you like Catalunia. By the way, Iate my best rice ever in
Tossa del Mar. It's called "arroz negro" (black rice) and it's like a
normal paella, but cook with the calamar's ink and only with fish and
seafood. Worthy to go and try!
